Ingredients 3/4 cup raisins 1 package Pennette 1 package Italian sausage, casings removed 1 bag Southern Greens Blend 2 garlic cloves, minced Pepper to taste 1/4 package Dry Toasted Pignolias 1/4 cup Grated Parmesan Cheese, plus more for serving
Directions
In a large pot of boiling water, cook pasta and raisins for about 8-10 minutes. Drain pasta and raisins, reserving 1 cup cooking water. Return pasta and raisins to pot.
While pasta is cooking, in a large skillet, cook sausage, breaking it up with a fork, until browned, about 5 minutes. Add greens, reserved cooking water, garlic, and pepper; cook, tossing, until greens wilt, 3 to 5 minutes. Cover to keep warm.
Add sausage mixture to pasta with raisins, toasted pignolias, and parmesan; toss to combine. Add more cooking water if pasta seems dry. Serve with more parmesan.
