(1) 20oz can kidney beans (2) cups cooked and cooled quinoa = (start with 3/4 cup raw) (1) red onion, chopped (2) bunches basil - stems discarded, leaves chopped (2) Lemons - juice of only
Large blow, mix beans, quinoa, onion and basil. Small bowl, whisk lemon juice and 1/2 c EVOO, season with salt and pepper Pour dressing over quinoa mix and toss to coat Serves 4
